Pedro Ximénez (PX) is a white grape variety renowned for producing sweet, dark wines in southern Spain's Andalusia region. These wines are crafted by sun-drying the grapes to concentrate sugars before fermentation, resulting in a syrupy, intensely sweet dessert wine. PX wines are distinguished by their deep color, rich flavors of raisins, figs, molasses, and caramelized sugar, and a velvety texture with a luxurious, lingering finish. They are often enjoyed as dessert wines or paired excellently with chocolate and robust cheeses.
