Sotol
Sotol is a traditional Mexican spirit distilled from the Dasylirion plant, also known as desert spoon, native to the Chihuahuan Desert. Originating primarily in Chihuahua, Durango, and Coahuila, sotol is produced by roasting the plant hearts in underground pits, fermenting them, and then distilling in copper stills. This process imparts an earthy, herbal, and slightly smoky flavor profile, often described with grassy and vegetal notes.
Sotol is available in various forms such as Plata (unaged), Reposado (aged for a few months), and Añejo (aged for at least one year). Notable brands include Hacienda de Chihuahua, Sotol Por Siempre, and Flor del Desierto, each offering unique expressions that highlight the spirit's distinct character and cultural heritage.
