
Double Distilled
Double distillation is a process commonly used in the production of spirits to increase purity and enhance flavor. In this method, the liquid is distilled twice, typically in pot stills. The first distillation, known as the "wash" or "stripping" run, separates the alcohol from the fermented mash, producing a liquid called "low wine."
The second distillation, known as the "spirit" run, further refines the low wine, removing impurities and concentrating the alcohol content. This results in a cleaner, more flavorful spirit. Double distillation is a traditional technique used in making high-quality spirits such as Scotch whisky, Irish whiskey, and some types of brandy. Brands like Jameson, Glenlivet, and Hennessy are known for employing double distillation in their production processes to achieve their distinctive smoothness and complexity.
