Daftmill
Daftmill is a small, family-owned distillery located in the Lowlands of Scotland, known for producing exceptional single malt Scotch whisky on a highly limited basis. Owned and operated by Francis and Ian Cuthbert, the distillery is unique in that it is a true "farm distillery," where the barley used in production is grown on the family’s farm. Established in 2005, Daftmill is a seasonal distillery, producing whisky only during the farm’s quieter months—malted barley is distilled during the summer after the spring harvest and again during the winter after the fall harvest, making it one of the few distilleries that operates on such a traditional, cyclical schedule.
Daftmill single malts are renowned for their elegant and refined flavor profiles, which are characteristic of Lowland whiskies. The whisky is distilled in small copper pot stills and aged in carefully selected oak casks, often ex-bourbon and sherry casks, allowing the spirit to develop rich, yet balanced flavors. Notes of orchard fruits, honey, vanilla, and malt are common, with a smooth, delicate finish that reflects the distillery’s meticulous craftsmanship.
Due to its small-scale production and the fact that the whisky is released in limited batches, Daftmill has garnered a loyal following among whisky connoisseurs who value quality over quantity.
