Aszu
Aszú is a renowned Hungarian dessert wine, primarily produced in the Tokaj region, celebrated for its rich sweetness and historical significance. Made from hand-picked, late-harvest grapes affected by noble rot (Botrytis cinerea), Aszú wines are known for their intense flavors and complex character. The production process involves selecting the shriveled, sugar-rich grapes and adding them to a base wine, resulting in a luxurious and sweet blend with deep flavor concentrations.
Tasting notes of Aszú often include layers of dried apricots, honey, orange peel, and marmalade, complemented by a refreshing acidity that balances its sweetness. Additional nuances of caramel, fig, and spices like ginger or cinnamon emerge with aging, giving the wine an intricate profile. The wine is typically golden to amber in color, with a velvety texture that coats the palate and lingers in a long, satisfying finish.
Traditionally served chilled, Aszú pairs exceptionally well with rich desserts, foie gras, or blue cheese. The sweetness and acidity also make it a great choice for sipping on its own as a dessert wine. Its unique balance of flavors and historical prestige have earned Aszú its place among the world's most esteemed dessert wines.
